3 Easy Lamb Recipes for Summer

If you need a reason to cook lamb this summer then we’ve got three great recipes that are reason enough! There’s nothing better than getting together on a lovely summer day and serving up some tasty lamb, so let’s take you through 3 easy to follow recipes:

Easy Lamb Recipes: BBQ Lamb Leg

What you’ll need:

  • 5 crushed garlic cloves
  • 1 tbsp paprika
  • 1 large lemon
  • 1/4 cup of olive oil
  • 1.5 kg lamb leg (boned and butterflied)
  • olive oil cooking spray
  • jacket potatoes (optional)

For Green Olive Mayonnaise

  • 1/2 cup stuffed green olives (chopped)
  • 3/4 cup whole-egg mayonnaise
  • 1/2 small lemon, juiced
  • 1 teaspoon of paprika


  1. Combine garlic, paprika, 2 tablespoons lemon juice, and oil in a large dish.
  2. Season lamb with salt and pepper.
  3. Score lamb so that the marinade can penetrate.
  4. Marinade in mixture and refrigerate for at least 3 hours.
  5. Remove it from the fridge half an hour before cooking.
  6. For green olive mayonnaise, mix all ingredients, season it with salt and pepper before refrigerating.
  7. Spray barbecue grill with olive oil.
  8. Barbecue the lamb in the grill in medium heat.
  9. When done barbecuing, cover the lamb and leave over medium-low heat for another 15 minutes.
  10. Let it rest for ten minutes.
  11. Serve with jacket potatoes, if desired, and mayonnaise.

Easy Lamb Recipes: Parmesan-Crusted Lamb Racks

What you need:

  • 3 lamb racks, French-trimmed
  • 2 tbs wholegrain mustard
  • 1/2 cup finely grated parmesan
  • 2 tbs honey
  • 3 slices day-old bread (tear coarsely)
  • 2 garlic cloves, chopped
  • 1 egg, lightly whisked
  • 1 tbs chopped fresh rosemary
  • Olive oil spray


  1. Combine the honey and mustard into a bowl.
  2. Spread evenly over the lamb.
  3. Season lamb with salt and pepper.
  4. Combine bread, parmesan, garlic and rosemary into a food processor.
  5. Make coarse breadcrumbs and transfer to a bowl.
  6. Stir in a single egg.
  7. Once again season with salt and pepper.
  8. Coat lamb racks evenly by pressing firmly over the racks.
  9. Place the lamb racks in a baking dish (crust-side up).
  10. Spray with olive oil.
  11. Bake for up to 25 minutes for medium done or until cooked to your liking.
  12. Set on a large plate and cover with foil.
  13. Let rest for 5 minutes.
  14. Serve and enjoy!

Easy Lamb Recipes: Barbecued Lamb with Pea Salad

What you need:

  • 2 tbsp seasoning of choice (Moroccan, if possible)
  • 8 lamb cutlets (french-trimmed)
  • 1/3 cup olive oil
  • 8 slices baguette
  • 150 g snowpeas (trimmed)
  • 150 g sugar snap peas (trimmed)
  • 2 tsp extra-virgin olive oil
  • 2 tbsp natural yoghurt (greek style)
  • 1 cup fresh parsley leaves
  • 3 radishes (trimmed and then thinly sliced)


  1. Preheat grill on medium-high heat.
  2. Combine seasoning and half of olive oil in a large bowl.
  3. Add the lamb and coat.
  4. Barbecue lamb on grill for 3-4 minutes each side (medium).
  5. Plate and cover with foil to keep warm.
  6. Brush bread with olive oil.
  7. Brill bread for 2 minutes or until golden.
  8. Boil a large saucepan of water.
  9. Reduce heat to low and simmer.
  10. Cook snap peas and snow peas separately in boiling water.
  11. Refresh each under cold water.
  12. In a bowl, whisk together yoghurt and extra-virgin olive oil.
  13. Season with salt and pepper.
  14. Add radish and parsley to peas.
  15. Plate and drizzle with yoghurt dressing.
  16. Serve with lamb and bread!
