Beef Marinades

Although we love a simple steak covered in its natural juices, it can also be delicious to add some flavour with a good beef marinade. Marinades are perfect for when you’re cooking cheaper cuts of meat, as they help to break down the muscle fibres and tenderise the meat. Below is a list of some tasty overnight marinades for you to try. With any of these recipes, you’ll have delicious and juicy beef cooking on the barbecue. 

Smoky Barbecue Beef Marinade

Ingredients:

  • 2 garlic cloves, finely chopped
  • 1 tablespoon smoked paprika
  • 2 tablespoons brown sugar
  • 1/4 cup golden syrup
  • 1 tablespoon white wine vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons barbecue sauce

Method:

  1. Combine all the ingredients in a large bowl.
  2. Place the beef into a glass dish and pour the marinade over.
  3. Cover with foil and leave to marinate in the fridge overnight.

Red Wine, Garlic and Thyme Marinade

Ingredients:

  • 3/4 cup red wine
  • 1/4 cup olive oil
  • 2 garlic cloves, crushed
  • 1 1/2 tablespoons chopped thyme leaves

Method:

  1. Combine all ingredients in a glass jar. Close the jar and shake well.
  2. Leave the marinade to settle for 2-3 days in the fridge before using.
  3. Place the beef into a marinating dish and pour the marinade over.
  4. Cover with foil and leave to marinate in the fridge overnight.

Teriyaki Beef Marinade

Ingredients:

  • 1 garlic clove, finely chopped
  • 1/3 cup dark soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon caster sugar

Method:

  1. Combine all the ingredients in a bowl and stir until the sugar dissolves.
  2. Place the beef into a marinating dish and pour the marinade over.
  3. Leave covered with foil in the fridge overnight.

Portuguese Beef Marinade

Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 garlic cloves, crushed
  • 1 tablespoon chopped chilli
  • 1 tablespoon ground ginger
  • 3 teaspoon chopped fresh oregano

Method:

  1. Whisk all ingredients in a bowl until combined.
  2. Place beef in a glass or ceramic dish and pour the marinade over.
  3. Cover with foil and place in the fridge overnight to marinate.
