  1. Preheat oven to 220 degrees Celsius.
  2. Use a sharp knife to score the pork skin at 1cm intervals. Tie the pork loin with string to secure before cooking.
  3. Mix together two tablespoons of olive oil, one tablespoon of rosemary and thyme, and one teaspoon of salt and black pepper.
  4. Rub the mixture all over the pork roast.
  5. Place the roast, fat side up, in a roasting pan and cook for roughly 35 minutes.
  6. Reduce the oven temperature to 200 degrees Celsius and continue cooking the pork for 35 minutes.
  7. Add any fruit or vegetables you would like. We recommend apples that are seasoned with olive oil, salt and pepper.
  8. Continue to cook the pork and apples for another 25 to 35 minutes until the skin is crispy.
  9. Remove the pork from the oven and leave to stand for 10 minutes before serving.
