There’s nothing more exciting than Christmas feasts, but sometimes afterwards we start craving some healthy dinner options. These low fat recipes are perfect for when you want to cook something both healthy and delicious!

Mint and Apple Lamb with Crunchy Salad

Not only is this a healthy dinner, but it will also fill you up!

Ingredients (to serve 4)

  • 8 x 75g lamb cutlets
  • Olive oil, for brushing
  • 1 cup (250ml) apple juice
  • ¼ cup finely chopped mint leaves
  • Sea salt and cracked black pepper
  • 150g snow peas (mange tout), trimmed and blanched
  • 1 bunch (300g) radishes, finely sliced
  • 2 stalks celery, trimmed and finely sliced

Method

  1. Heat a large non-stick frying pan over high heat. Brush the lamb cutlets with olive oil and cook them for 2–3 minutes each side (for medium) or until cooked to your liking.
  2. Set aside and keep warm. Reduce the heat to medium.
  3. Place the apple juice, mint, salt and pepper in a bowl and stir to combine.
  4. Gradually add the apple mixture to the pan and cook for 3–4 minutes or until slightly reduced.
  5. Thinly slice the snow peas and place in a bowl with the radish and celery and toss to combine.
  6. Spoon over the apple and mint sauce and serve the crunchy salad with the lamb cutlets.

Char-Grilled Corn and Spiced Chicken Salad

With a creamy yoghurt dressing, this is one of the few low fat recipes that still tastes delightfully naughty!

Ingredients (to serve 2)

  • 2 cobs corn, husks and silks removed
  • 1 bunch asparagus, trimmed
  • 1 x 200g chicken breast fillet, trimmed
  • Olive oil, for brushing
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 125g cherry tomatoes, halved
  • 1 (100g) red onion, thinly sliced
  • 1 baby cos (romaine) lettuce

For the Yoghurt Dressing

  • ½ cup (150g) natural low-fat yoghurt
  • 1 clove garlic, crushed
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon water
  • Sea salt and cracked black pepper

Method

  1. To make the yoghurt dressing, place the yoghurt, garlic, vinegar, water, salt and pepper in a bowl and stir to combine. Set aside.
  2. Heat a char-grill pan or barbecue over high heat. Char-grill or barbecue the corn for 10–12 minutes, turning occasionally. Slice off the kernels.
  3. Char-grill or barbecue the asparagus for 3–4 minutes or until tender. Set aside.
  4. Brush the chicken with oil and sprinkle with the paprika and cumin. Char-grill or barbecue for 5 minutes each side or until cooked through.
  5. Slice the chicken and asparagus and place in a bowl with the corn, tomato, onion and lettuce and toss to combine. Spoon over the dressing to serve.
