How to Cook Beef Short Ribs

A very popular cut is the beef short ribs, despite how messy eating a plate of ribs can get, it certainly is one of the most tastiest dishes you can make. We share with you one of our favourite beef short rubs recipes, so try them out and see for yourself!

Before you decide on which of the beef short ribs recipes, you’re going to cook, it’s a good idea to get to know this delicious meat some more. What makes this cut of beef that popular is because it makes for more tender dishes than when you use pork spare ribs. Pork spare ribs are a bit chewy when compared to beef short ribs, which fall off the bone when cooked properly. Another trait of beef short ribs is that they are meatier than their pork counterpart.

Now that you know the major differences between pork short ribs and beef short ribs, it’s time to try out some beef short ribs recipes.

Braised Beef Short Ribs with Horseradish Mash

Ingredients

For the beef short ribs

  • 2 kg short beef ribs
  • 2 tbsp olive oil
  • 2 carrots, cut into pieces
  • 5 garlic cloves
  • 1 large onion, thickly sliced
  • 2-3 sprigs fresh thyme
  • 350ml red wine
  • 400g canned chopped tomatoes
  • 200ml beef stock
  • Salt and pepper

For the horseradish mash

  • 2 kg potatoes, cut into large pieces
  • 2-4 tsp creamed horseradish
  • 200ml milk
  • 110g butter
  • Salt and pepper

Method

For the beef short ribs

  1. Preheat oven to 170 degrees C.
  2. Heat oil in a large tray over a medium heat. Fry beef ribs until browned on all sides.
  3. Add carrots, garlic, onion and stir.
  4. Add thyme, then pour in tomatoes, wine and stock. Mix well to combine and bring to boil.
  5. Transfer to oven, cook uncovered until sauce thickens and meat is falling from the bones.
  6. Season with salt and pepper.

For the horseradish mash

  1. Boil potatoes in a pan of salted water until tender. Drain, then return to pan.
  2. Dry the same pan using the heat, then remove from heat.
  3. Mash potatoes, then mix in the butter and milk.
  4. Combine with creamed horseradish, then season with salt and pepper.
  5. Divide beef ribs among four plates. Spoon over cooked vegetables and sauce.
  6. Place mash alongside each serving.
  7. Enjoy!

Asian-Style Braised Short Ribs

Ingredients

  • 2 kg of beef short ribs, cut into portions
  • 1/4 cup rice wine vinegar
  • 1 cup soy sauce
  • 1 stalk lemongrass, halved and punded
  • 3 cloves garlic, crushed
  • 1 tbsp ginger, peeled and minced
  • 4 cups water
  • 1/2 cup light brown sugar
  • 1/2 cup sliced green onion bottoms
  • 1/4 cup fresh orange juice
  • 3/4 tsp crushed red pepper
  • 2 tbsp fresh lemon juice
  • 1/4 cup hoisin sauce
  • 2 tsp orange rind, finely grated, for serving
  • Jasmine rice, for serving

Method

  1. Preheat the oven to 175 degrees C.
  2. In a wide stockpot, combine short ribs, vinegar, soy sauce, garlic, ginger, lemongrass, brown sugar, green onion bottoms, water, crushed red pepper, and 2 tablespoons of orange juice.
  3. Make sure short ribs are submerged in the liquid.
  4. Cover and bake ribs until the meat is falling off the bones.
  5. Remove from the braising liquid and return cover.
  6. Increase the temperature to 220 degrees C.
  7. Drain and discard fat from cooking liquid. Mix remaining braising juices and hoisin sauce in a saucepan and bring to the boil.
  8. Reduce until about 1 1/4 cups remain. Discard solids using a strainer.
  9. Add 2 tablespoons of orange juice and the lemon juice.
  10. Return the ribs and reduced sauce to the stockpot. Bake until ribs are slightly glazed.
  11. Serve hot over jasmine rice. Garnish with the green onions if desired.
