Roasted Pork Tenderloin Recipe with Apples


  • 2 (500 grams) pork tenderloins
  • 1 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1 tbsp Dijon mustard
  • 1/4 tsp ground black pepper
  • 1 tbsp fresh thyme leaves, chopped
  • 2 apples, cored and sliced
  • 1 cup chicken stock
  • 2 onions, sliced
  • 1 tbsp butter


  1. Heat oven to 220 degrees C.
  2. Trim tenderloin of skin. Pat dry with paper towels.
  3. Rub both tenderloins with a tablespoon of oil and salt.
  4. Over medium heat temperature, heat a tablespoon of oil in a large oven safe skillet.
  5. Add the pork tenderloins and cook until evenly browned all over.
  6. Remove pork and place on cutting board.
  7. On the pan, cook apples and onions for about 5 minutes.
  8. Rub the pork with the mustard, sprinkle with thyme, black pepper, and rub until evenly coated.
  9. Place pork tenderloins on top of apples and onions.
  10. Place in oven and roast for 10 to 15 minutes or until the internal temperature is 65 degrees C.
  11. Plate pork and cover with foil. Let it rest for 10 minutes.
  12. While the pork rests, place pan over medium heat.
  13. Add chicken stock and scrape pan with wooden spoon.
  14. Bring to a simmer and reduced broth to half, before adding the butter.
  15. Slice pork into 1-inch slices.
  16. Drizzle some of the pan sauce over the top and serve with the apples and onions.
