1. Choose the right meat
If you’re wondering how to cook steak, it all starts with choosing the right cut of meat. It’s important to remember that different cuts produce different types of steak. Cuts from hardworking muscles will contain more connective tissues and are likely to be tough to chew. Unless you are cooking meat for a long time, then you should avoid hardworking cuts. When you’re cooking a steak on the barbecue we recommend a rib eye or something similar.
2. Be sure to have high heat
Another thing to remember, is that steak will taste much better if it’s been cooked quickly over a high heat. Leaving it to cook for a long time over lower heat will only dry out the meat and make it flavourless.
3. Say goodbye to the knife
When it comes to testing whether your steak is ready, the first rule is to avoid cutting into it with a knife. This will only release all the juices, and end up drying out the meat. In order to test whether it’s done, press the back of the tongs against the centre of the steak. If it’s soft, your steak is still rare. If it’s firm and springs back, then it is medium. If it’s extremely firm, then it’s well-done.
4. Practice means perfect
Remember that the more you practice cooking steak, the better you will become at judging when it is done. This is a real skill that takes time to develop!
5. Leave it to rest
Once the steak is cooked to your liking, place it on a plate, cover it and leave it to rest for half the time that you cooked it for. This is the best way to let the juices settle and redistribute through the meat, making it nice and tasty.
