Pepper and Thyme Roast Beef

Cross Rib Beef Roast with Yorkshire Puddings


2.5Kg Beef Roast
5 sprigs thyme, leaves picked
2 garlic cloves, crushed
Cracked pepper, to taste
Sea salt, to taste
2 tablespoons vegetable oil
Hot gravy and roasted vegetables, to serve


  1. Take the beef out of the fridge 20 minutes before cooking and preheat the oven to 200C.
  2. Place the thyme, garlic, pepper, salt and vegetable oil in a small bowl and mix together until well combined. Rub all over the beef and then place the beef into a roasting tray.
  3. Pour half a cup of water around the beef and scatter some extra thyme, if you like. For medium results, as per the picture above, cook the beef for 1 hour and 40 minutes.
  4. Once the beef is done, rest for 15-20 minutes covered loosely with foil. This is very important to redistribute the juices throughout the meat. Serve with gravy and your favourite vegetables.
