Pepper and Thyme Roast Beef
2.5Kg Beef Roast
5 sprigs thyme, leaves picked
2 garlic cloves, crushed
Cracked pepper, to taste
Sea salt, to taste
2 tablespoons vegetable oil
Hot gravy and roasted vegetables, to serve
- Take the beef out of the fridge 20 minutes before cooking and preheat the oven to 200C.
- Place the thyme, garlic, pepper, salt and vegetable oil in a small bowl and mix together until well combined. Rub all over the beef and then place the beef into a roasting tray.
- Pour half a cup of water around the beef and scatter some extra thyme, if you like. For medium results, as per the picture above, cook the beef for 1 hour and 40 minutes.
- Once the beef is done, rest for 15-20 minutes covered loosely with foil. This is very important to redistribute the juices throughout the meat. Serve with gravy and your favourite vegetables.
