Pork Ribs Marinade Ideas

Everyone loves a delicious set of pork ribs, yet not many people know how to cook them! In order to make your ribs super tender and tasty, it’s critical to choose a good marinade recipe.   Marinating the ribs won’t only add flavour, but will also help to break down the muscle fibres, making the meat soft and juicy.   Acidic marinades are particularly effective for tenderising pork, and therefore the recipes often contain a citrus juice or vinegar.  Here are some fantastic ideas for making your own pork rib marinades.

Each recipe will marinate approximately 1.4kg of ribs. The following method applies to all three recipes.


Combine all ingredients in a small bowl.  Place the ribs into a large shallow glass or ceramic dish and pour the mixture over. Turn the ribs to ensure they are evenly coated and then cover with plastic wrap. Place in fridge for 6 hours or overnight, turning occasionally. Once the ribs have been marinated, place them on a pre-heated barbecue for approximately 10 minutes before turning and cooking for another 5-7 minutes.

American Style Pork Ribs Marinade

  • 2/3 cup corn syrup (or glucose syrup)
  • 1/4 cup Worcestershire sauce
  • 1 tablespoons mustard powder
  • 1/4 cup dark brown sugar
  • 1/2 cup beer
  • 2 tablespoons golden syrup

Chilli Lime Pork Ribs Marinade

  • 2 long red chillies, finely chopped
  • 2 teaspoons finely grated lime rind
  • 1/4 cup lime juice
  • 1 tablespoon sweet soy sauce
  • 1/3 cup firmly packed brown sugar
  • 2 garlic cloves, crushed

Peking Pork Ribs Marinade

  • 1/4 cup hoisin sauce
  • 2 garlic cloves, crushed
  • 1/4 cup soy sauce
  • 2 tablespoons Chinese cooking wine
  • 2 tablespoons honey
  • 1/2 teaspoon Chinese five-spice
