Satay Cutlets With Lime

Ingredients

12 frenched lamb cutlets
1/3 cup crunchy peanut butter
2 teaspoons crushed garlic
1 teaspoon chopped ginger
1 teaspoon chopped chilli
1 teaspoon Song Gai fish sauce
2 teaspoons brown sugar
1/3 cup lime juice

Method

Serves 4

  1. Marinate lamb cutlets in combined remaining ingredients for 2-3 hours (or overnight for more flavour).
  2. Heat grill or BBQ on high. Cook cutlets until edges char, about 5 minutes on each side. Rest for 2-3 minutes before serving

Serving Suggestion:
Serve with jasmine rice and a salad. Garnish with fresh lime.
