Turkey Stuffing Recipes from around the World

French Beef and Pork Stuffing

Ingredients

  • 1 pound lean ground beef
  • 1 pound ground pork
  • 1 onion, chopped
  • 3 potatoes, peeled and diced
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon poultry seasoning
  • 1 pinch brown sugar
  • 1/2 cup water
  • 1 tablespoon all-purpose flour
  • 1 tablespoon butter
  • Salt and pepper to taste

Method

  1. In a large skillet over medium heat, cook beef and pork until brown. Stir in onion, potatoes, cinnamon, nutmeg, poultry seasoning, brown sugar and water.
  2. Cover, reduce heat to low, and simmer 20 minutes. Stir in flour, butter, salt and pepper until thickened. Simmer for 5 to 10 minutes.
  3. Fill turkey cavity with stuffing mixture just before cooking

Australian Apricot and Pistachio Stuffing

Ingredients

  • 140g (2 cups) fresh breadcrumbs
  • 180g (1 cup) Turkish apricots, chopped
  • 1 x 80g pkt Sunbeam pistachio kernels, coarsely chopped
  • 1/2 cup chopped fresh continental parsley
  • 2 eggs

Method

  1. Combine breadcrumbs, apricot, pistachio and parsley in a bowl.
  2. Add eggs and mix until combined.
  3. Fill turkey cavity with stuffing mixture just before cooking

Polish Raisin and Almond Stuffing

Ingredients

  • 1 pound stale egg bread like brioche, crumbled or cut into small cubes
  • 4 cups milk
  • 4 large eggs
  • 4 tablespoons soft butter
  • 2 cups raisins plumped in water and drained
  • 2 cups blanched chopped almonds
  • 1 cup dry bread crumbs
  • 1/4 cup chopped parsley
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cloves
  • Salt and pepper to taste

Method

  1. Combine all ingredients thoroughly.
  2. Fill the Turkey cavity with stuffing before cooking it. If there are leftovers, they can be baked separately in a pan to serve on the side.
  3. Note: do not stuff the Turkey in advance of cooking – this can harbour bad bacteria.
